Summer workshop
Valéry and Jean-Daniel of Les Loges de la Folie , have established their "Summer Workshops" to help demystify wine. The first is an introduction to wine tasting, with simple tools in a fun and friendly environment and the second, a discovery of organic viticulture (followed by a tasting of wines from the area). Wine and fine food in Beaujolais – in 3 steps
Background information on history of vines and wine
After visiting the exposition ‘The History of winemakers in Beaujolais', which includes an exceptional collection of tools, displayed on 230 m2, you get from those hundreds of tools of ancient times to the most modern methods of cultivation and wine production. At Domaine Paire, which exists already for four centuries, biological cultivation is order of the day, meaning suppressing the use of insecticides, herbicides, fertilizers and artificial plant products. You will hear and discuss about different methods of wine production, oenology, natural yeast, sulphates... and it will become more and more obvious why following the biological way makes a lot of sense.
An introduction to wine tasting is the second part of your program and takes place in the estate's reception hall. You will learn how to open, serve and taste a wine with the greatest of pleasure. We will speak about:
- colours and its signification
- principal aromas of wine
- balance of tastes, matching food and wines
Adegustation of agricultural products completes the work shop by giving a practical example for matching food :
- a local cheese is served accompanied by white wine
- local charcuterie accompanied by 2 red wines

Farmers aperitif in Beaujolais
Nothing is better suited to discover the work of the
winemaker and the agricultural products of the near surrounding. Count in about
three hours and visit Domaine Paire ,
which is only a stones’ throw away from Lyon.
The tour starts directly on the vineyard by discovering the methods of
biological cultivation. Next you visit the museum where you can admire the collection
of winemaker tools and learn more about the evolution of vine culture since the
Middle Ages until today. This preparation allows you to understand the methods
of today’s wine production and gives you profound background knowledge for the following
wine tasting. It is Jean-Jacques Paire who will accompany your during your
visit by giving advice for tasting and enjoying the estate’s white, rosés and
red wines -and surprises you with plates of agricultural products: crudités of
the season, local charcuterie and cheeses produced in Cenves at Haut
Beaujolais. Jean Jacques will lead you once again back into the Middle Ages
with hypocras. The farmer’s aperitif
at the winemakers is a product approved by the national network ‘Bienvenue à la ferme’ - Welcome
to the farm.
This workshop is subject to charge and can be arranged
upon request for individuals and groups. Domaine Paire offers further wine
discoveries on reservation. If you rather drop by spontaneously:
